Is there anything quite like a homemade pizza with a glass of wine to cap off a long day? This Roasted Vegetable Pizza with Pesto & Herbed Goat Cheese is loaded with fragrant vegetables and topped with creamy goat cheese. If you’re feeling ambitious, make your own pizza crust or otherwise buy at your local grocery store or bakery. 

You might see this recipe and think OH HECK NO I DO NOT HAVE THE TIME FOR THAT BUSINESS.

But I would like you to stop right there and say, think again my friend. Homemade pizza can absolutely be an amateur sport and I am here to show you how it’s done. For those of you readers who are feeling a little extra ambitious and like that kind of challenge (I know who you are), I’ll provide both the ‘easy-peasy’ steps and the ‘professional baker’ instructions below.

Basic Garlicky Tomato Soup

What’s better than a warm bowl of hearty, comforting tomato soup? This big-batch Basic Garlicky Tomato Soup comes together in less than an hour – the perfect low maintenance dinner to last you through the week. 

One of the things that I love in life is a big-batch soup that you can make once, and then freeze for endless dinners. Or rather, freeze for like 2 (maybe 3) dinners… But 3 dinners is better than no dinners in my books. Consequently, if you’re like me, then this Basic Garlicky Tomato Soup is the perfect recipe for you.

Serve with grilled cheese (+ extra cheese) for best results.

Vegan Pesto

If you have someone in your family who is vegan or has a food allergy/intolerance to dairy, this Vegan Pesto is the perfect sauce for you. Use it with pasta, as a fish topper, or as a salad or grain bowl dressing! Filled with vitamin-B12 rich Nutritional Yeast and healthy fats from nuts and olive oil, this sauce is not only delicious but a nutritional powerhouse. 

I have been over-the-moon excited to share this recipe with you because it has been such a massive hit in my household. Pesto is one of my absolute favourite sauces for pasta, salads, etc. etc. etc. (because what CAN’T pesto be on). Sadly for me, I live with someone who can’t tolerate lactose, so pesto (which always contains dairy one way or another) is a bit of a bone of contention. Generally, homemade pesto is made with parmesan cheese and if you go with store-bought pesto in a jar, it usually has some variation of modified milk ingredients and/or just straight up lactose. So in light of all of that, this recipe was created.

Grandma’s Lemon Loaf

Made by my sweet Grandma, Linda, this buttery, dense, citrusy Lemon Loaf was a staple at all family gatherings. The best easy loaf, this will undoubtedly become one of your family favourites as well. 

Oh man. This recipe is filled with so, so, so many feelings. My sweet Grandma, Linda, who passed a few years ago was known for her butterly lemon desserts. Including (but definitely not limited to) this lemon loaf and some equally delicious lemon squares.

There’s just something about a Grandma’s hands that turns a baked good from just a baked good into something filled with so much more than that.
