I have been over-the-moon excited to share this recipe with you because it has been such a massive hit in my household. Pesto is one of my absolute favourite sauces for pasta, salads, etc. etc. etc. (because what CAN’T pesto be on). Sadly for me, I live with someone who can’t tolerate lactose, so pesto (which always contains dairy one way or another) is a bit of a bone of contention. Generally, homemade pesto is made with parmesan cheese and if you go with store-bought pesto in a jar, it usually has some variation of modified milk ingredients and/or just straight up lactose. So in light of all of that, this recipe was created.
