Tasty soft-baked, flourless peanut butter oatmeal cookies that use avocado and honey instead of butter and sugar.
So I’m not usually the most adventurous person when it comes to trying obscure ingredients in my baked goods. People who know me know that I take my baking prettyyyy seriously and I’m not usually one to ‘ruin’ treats with healthy ingredients – I mean, if I’m going to eat a delicious baked good once in a while then let’s make it worth it, am I right?
However, I tried these cookies a few years back at a potluck and was absolutely shocked when I found out they had no butter or sugar! I hadn’t ever thought of using avocado as a substitute for butter or margarine in a cookie recipe but it makes total sense since avocado has such a high fat content. I think this is something I’m going to need to experiment with more in the future. If you’re still weirded out by the idea of avocado cookies, trust me (from the baking snob herself), they don’t turn green and you can’t taste the avocado in the slightest.

Avocado Peanut Butter Cookies

Ingredients
- ½ large avocado, mashed (about 1/3 cup)
- ½ cup peanut butter
- 1 egg
- 2 tablespoons honey
- ½ teaspoon vanilla extract
- 2 cups oats
- ½ teaspoon baking powder
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit. In a large bowl, mash the avocado well with a fork. Add the peanut butter and stir/mash with a fork until there are no large lumps.
- Stir in the egg, honey and vanilla extract.
- Stir in oats and baking powder. Fold in chocolate chips until combined.
- The batter is quite sticky so use a spoon to form mounds on a greased cookie sheet. Bake for about 12-15 minutes or until golden brown around the edges.
