Perfectly fluffy Cheddar, Garlic & Herb Irish Soda Buns. Easy recipe with no-yeast, no-kneading required and no hassle! Make these as a side-kick to your favourite cozy soup.
I told myself that I would 1000% post this recipe for St. Paddy’s Day (given the name). BUT the fact of the matter is, I’m the most inpatient human in the world and I’ve spent way too long perfecting this recipe to keep it under wraps for another second.
SO here you have it, the EASIEST bun recipe that you will ever encounter. No yeast required, no kneading, no rising, no proofing, no NOTHING. Except buns…. lots and lots of tasty buns.
You can customize these however you want and get creative with your inclusions. I would highly recommend using a nice, sharp cheddar (like Balderson (drool)) and some crisp herbs to balance out the flavour. Rosemary and parmesan, extra garlic and sage, fresh basil, mozzarella and DARE I SAY … sundried tomatoes?
I see more buns in my future.

Ingredients
- 1 3/4 cups milk + 2 tablespoons vinegar (to make your own buttermilk)
- 3 cups all-purpose flour
- 1 1/2 cups whole wheat flour
- 1 1/2 tablespoons sugar
- 1 1/2 teaspoons table salt
- 1 teaspoon baking soda
- 1 large egg, lightly beaten
- 3 tablespoons extra-virgin olive oil
- 1 cup shredded sharp cheddar cheese
- 2 cloves garlic, minced
- 1/2 cup chopped fresh parsley
- 1 egg white (for egg wash at the end)
Instructions
- Preheat oven to 375 degrees Fahrenheit. Line a large baking sheet with parchment paper.
- In a large measuring cup, combine milk and vinegar. Let stand for 5-10 minutes until curdled*.
- In a separate mixing bowl, combine all-purpose flour, whole wheat flour, sugar, table salt and baking soda. Stir with a fork.
- Add the homemade buttermilk (milk + vinegar mixture), lightly beaten egg and extra-virgin olive oil to the flour mix. Continue to stir using a fork until the mixture is so thick that you can't mix anymore.
- Add shredded cheddar cheese, minced garlic and fresh parsley. Mix with your hands a few times until cheese, garlic and parsley are thoroughly dispersed.
- Use 1/4 measuring cup to shape dough into mounds on the baking sheet. Brush the top of each bun with the egg wash, using a spoon or cooking brush.
- Bake for 18-21 minutes or until golden brown on the top and bottom.
Notes
*Combining milk with vinegar is an easy way to make your own buttermilk, otherwise you can buy buttermilk in the dairy section of your grocery store
