I remember when I was a teenager I went through a granola phase. Thinking I was being the healthiest person in the entire world (because I was a dramatic teenager), I would eat huge bowls of granola every single morning. Only later, when I actually started to pay attention to nutrition, did I find out that my “healthy” bowl of granola was actually pretty darn heavy. Granola is one of those tricky things that appears super healthy but in reality, is often laden with oil and sugar.
My lovely mother, who never fails to impress me with her recipe-makeover talents, invented this Light n’ Easy Peanut Butter Granola recipe. She always manages to tweak recipes to make them healthier while also maintaining the taste, texture and overall integrity of the dish.

This recipe is also incredibly easy. Oftentimes people think that granola is tricky to make because it comes in these random, mystical pieces that must have been meticulously fashioned by some sort of fancy machine (or maybe it was just me that thought that). However, in reality all you have to do is mix up the batter (I do it with my hands), sprinkle it randomly on a cookie sheet and bake for a while until it hardens up. Easy as pie (or granola perhaps).

Ingredients
- 2 cups rolled oats
- ½ cup whole wheat flour
- ¼ cup packed brown sugar or coconut sugar
- 1/3 cup natural peanut butter, melted slightly so that it is pourable
- ¼ cup apple juice
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 300 degrees Fahrenheit. Line a large cookie sheet with parchment or aluminum foil and spray with non-stick cooking spray.
- In a medium-large bowl, combine the oats, flour and brown or coconut sugar.
- Microwave the peanut butter for about 20 seconds or until soft enough that it is pourable. Add the peanut butter, apple juice, maple syrup and vanilla extract to the oat mixture.
- Mix using your hands until thoroughly combined. Crumble the granola dough onto the prepared cookie sheet, evenly distributing it.
- Bake for 25 minutes then remove from the oven and stir the granola around so that it cooks evenly and does not burn. Return to the oven and bake for 10 more minutes.
